Abstract Water‐in‐oil‐in‐water (w/o/w) multiple emulsions are considered that could be suitable components of functional dairy products. Such emulsions enable the preparation of low‐calorie products, encapsulation of bioactive components or microorganisms, and their protection during digestion. The application of ionic organic bases in the copper‐catalyzed amination reaction (Ullmann reaction) has been studied at room temperature, with sub‐mol‐% catalyst loadings, and with more challenging amines at elevated temperatures. We herein report a robust and safe palladium catalyzed domino‐carbonylation/Suzuki–Miyaura cross‐coupling reaction of vinyltosylates with arylboronic acids using Mo(CO)6 as CO‐source. The derived γ‐keto ester were subsequently cyclized under acidic conditions to obtain γ‐hydroxybutenolides, an important structural motif, which occurs in biologically active natural products.
