Influence of Ultrasonic Treatment on the Physiochemical Properties and Feature Structure of Pea Starch in Acid and Salt Systems

This study explores the influence of ultrasonic treatment on the physiochemical properties of pea starch (PS), such as gelatinization, rheology, and texture, and on its feature structure in acid and salt systems. Results show that ultrasonic treatment reduced the viscosity and improved the thermal and cold stability of PS in both acid and salt systems, which is reflected through peak viscosity, final viscosity, breakdown value, and setback value. 1,7,8‐Polymetalated 3‐tert‐butyl‐8‐R‐4‐oxo‐4H‐pyrazolo[5,1‐c][1,2,4]triazines (M = Li, Na; R = CO2Et, CN, H, D, and Li) have been generated for the first time using acidic NH deprotonation and lithium/bromine exchange method at −112 ÷ −97°C. Synthesis of Novel 1,2,4‐Triazole‐3‐thione Derivatives as Influenza Neuraminidase Inhibitors

A series of 1,2,4‐triazole‐3‐thione derivatives (6a–6t) were synthesized and evaluated against influenza viruses (H1N1) neuraminidase (NA) in vitro. Eighteen compounds exhibited inhibitory potency with IC50 values ranging from 14.68 ± 0.49 to 39.85 ± 4.23 μg/mL. Among them, compounds 6e and 6h showed significant inhibitory activity with IC50 values of 14.97 ± 0.70 and 14.68 ± 0.49 μg/mL, respectively. Structure activity relationships were established.
