Werner Nowaczyk describes, with the help of Dr Ethan Nol, the alcoholic fermentation process that is the basis of wine production. The basis for this is the breakdown of glucose by yeast into ethanol and carbon dioxide, with the formula: C6H12O6 → 2C2H5OH + 2CO2.
