Molecular and structural properties of three major protein components from almond kernel

Published: 23 November 2017

Author(s): Shugang Li, Shang Chu, Jiankang Lu, Ping Wang, Meihu Ma

Abstract Three major protein components, namely, albumin, globulin, and glutenin, were extracted from Xinjiang SC‐1 defatted almond kernel powder using the Osborne classification method, and their molecular and structural properties were analyzed. SDS‐PAGE indicated that the molecular weight distribution of almond kernel proteins was within the range of 21–245 kDa. The percentages of essential amino acids...

Measuring the effectiveness of management interventions at regional scales by integrating ecological monitoring and modelling

Published: 23 November 2017

Author(s): Robert P Freckleton, Helen L Hicks, David Comont, Laura Crook, Richard Hull, Paul Neve, Dylan Z Childs

Abstract BACKGROUND Because of site‐specific effects and outcomes, it is often difficult to know whether a management strategy for the control of pests has worked or not. Population dynamics of pests are typically spatially and temporally variable. Moreover, interventions at the scale of individual fields or farms are essentially unreplicated experiments; a decrease in a target population following ...

Prediction of overall glucose yield in hydrolysis of pretreated sugarcane bagasse using a single artificial neural network: good insight for process development

Published: 23 November 2017

Author(s): Laura Plazas Tovar, Elmer Ccopa Rivera, Adriano Pinto Mariano, Maria Regina Wolf Maciel, Rubens Maciel Filho

Abstract BACKGROUND In this work a single artificial neural network (ANN) was used to model the overall yield of glucose (YGLC) as a function of a wide range of operating conditions of both pretreatment and enzymatic hydrolysis. RESULTS The model was validated experimentally and presented good predictions of YGLC. Sensitivity analysis using the ANN model indicated that most of...

PSO‐based BP‐ANN predictive model of S. Typhimurium in processing of surimi with citric acid

Published: 23 November 2017

Author(s): Tian Qin, Shaowei Liu, Yizheng Mao, Xue Liu, Xiaozhi Tang, Ran Li, Wanjing Cai

Abstract Foodborne pathogenic contamination is a major problem of surimi production. In this study, the effect of variables, namely citric acid concentration (0.5, 1, and 2%), process temperature (4 and 25 °C) and time (1–15 min) on the inactivation of Salmonella Typhimurium (S. Typhimurium) were investigated. The results indicated that citric acid had a significant effect on the survival of S. Typhimurium. To describe the...

Optimization of pork jerky fermentation with Lactobacillus bulgaricus

Published: 23 November 2017

Author(s): Changqing Zhao, Li Shu, Ziyang Lu, Jing Huang, Sha He, Yubin Li

Abstract Lactobacillus bulgaricus was used to ferment raw pork to pork jerky at different fermentation conditions, including temperature, initial pH value, and time. Through assessing the sensory attributes, the free amino acids, and pH of the pork jerky, it was determined that the optimum conditions for fermentation was temperature of 35 °C, initial pH of 6.5, and fermentation time of 36 hr. Through fermenting...

Production of pomegranate fruit leather (pestil) using different hydrocolloid mixtures: An optimization study by mixture design

Published: 23 November 2017

Author(s): Ismail Tontul, Ayhan Topuz

Abstract Pestil (a kind of fruit leather) is a traditional Turkish product generally made from mulberry, grape, and apricot. It is a good alternative for unhealthy candies made from corn syrup and artificial colorant. However, in the traditional processing of pestil, fruit juice (which has 10–14°Bx) and other ingredients (honey, milk, etc.) are boiled in the open vessel to concentrate (40–50°Bx) and starch...

Chicken fillets subjected to UV‐C and pulsed UV light: Reduction of pathogenic and spoilage bacteria, and changes in sensory quality

Published: 23 November 2017

Author(s): Anette McLeod, Kristian Hovde Liland, John‐Erik Haugen, Oddvin Sørheim, Kristine S. Myhrer, Askild L. Holck

Abstract We have compared the efficacy of continuous ultraviolet (UV‐C) (254 nm) and pulsed UV light in reducing the viability of Salmonella Enteritidis, Listeria monocytogenes, Staphylococcus aureus, enterohemorrhagic Escherichia coli, Pseudomonas spp., Brochothrix thermospacta, Carnobacterium divergens, and extended‐spectrum β‐lactamase producing E. coli inoculated on chicken fillet surface. Fluences from 0.05 to 3.0 J/cm2 (10 mW/cm2, from 5 to 300 s)...

Resveratrol, pterostilbene, and dementia

Published: 23 November 2017

Author(s): Klaus W. Lange, Shiming Li

Abstract Resveratrol is a natural phytoestrogen with neuroprotective properties. Polyphenolic compounds including resveratrol exert in vitro antioxidant, anti‐inflammatory, and antiamyloid effects. Resveratrol and its derivative pterostilbene are able to cross the blood‐brain barrier and to influence brain activity. The present short review summarizes the available evidence regarding the effects of these polyphenols on pathology and...

Prevalence, molecular identification and characterization of Bacillus cereus isolated from beef burgers

Published: 23 November 2017

Author(s): Maryam Soleimani, Hedayat Hosseini, Zahra Pilevar, Mehrangiz Mehdizadeh, Frédéric Carlin

Abstract The 3‐component hemolysin BL (Hbl) and non‐hemolytic enterotoxin (Nhe) are probably associated with Bacillus cereus diarrheal outbreaks. In this study, toxin transcription of 18 biochemically positive isolates isolated from 80 beef burgers containing different percentage of meat (30, 60, and 90%) were evaluated using PCR method. Bacterial growth curves were further obtained by Bioscreen C to predict B. cereus...

Evaluation of cleaning methods for residual orange extract on different cookware materials using ELISA with profilin allergen indicator

Published: 23 November 2017

Author(s): Kyohei Kiyota, Junko Sakata, Taro Satsuki‐Murakami, Masato Yoshimitsu, Kazuhiko Akutsu, Masami Ki, Hiroyuki Hashimoto, Keiji Kajimura, Tetsuo Yamano

Abstract Unintentional contamination of cookware with allergen residues causes unexpected allergic reactions to individuals with food allergies. Our aim was to find an efficient cleaning method for residual orange extract as a food allergen on cookware fabricated from four types of materials—polypropylene (PP), wood, stainless steel, and glass—after food preparation. To evaluate the cleaning methods, we...
